A True Taste of Crete: Cooking with Koula in Vamos Village
There are travel experiences that stay with you long after your suitcase is unpacked. In this traditional stone home where time seems to stretch and soften, I had the privilege of joining Koula, a warm and wise Cretan cook, for a hands-on cooking lesson that was part class, part cultural ritual, and part celebration.

A Warm Welcome & the Language of Herbs
There are places you visitโand then there are places you feel. During my trip to the sun-drenched village of Vamos, nestled in the foothills of western Crete, I felt something rare: a deep, quiet sense of belonging.
I had signed up for a cooking class, expecting recipes. What I got instead was a day steeped in tradition, flavor, story, and soul.

We were welcomed by Koula, a gracious Cretan woman with kind eyes, sun-warmed hands, and the confident ease of someone who has cooked her whole life not for show, but for love. We began not at the stove, but around a tableโsipping mountain tea, nibbling on nerantzi spoon sweet.
Koula began the class not with ingredients, but with a conversation about Cretan herbsโhow they grow, when theyโre harvested, what they heal, and how they flavor food and memory alike.

As she spoke, the air was already full of the intoxicating scent of fresh mint and dill, two herbs that would follow us throughout the day, tying the dishes together like old friends.
Cooking Together, Cretan-Style

We prepared six traditional Cretan dishes, each one more colorful and flavorful than the last:
- Greek Salad โ crisp cucumbers, sun-ripened tomatoes, red onions, olives, and feta, all generously dressed in fragrant olive oilโa quantity that surprised some of the group until Koula grinned and said, โIn Crete, we donโt drizzle. Olive oil is a key ingredient.โ
- Kalitsounia โ delicate little cheese pies filled with mizythra cheese and mint, wrapped in handmade pastry we learned to roll ourselves!

Skip the stress. A local can help you shape your ideal Crete experience โ full of hidden gems, authentic eats, and stunning beaches.
📅 Book Your Consultation- Stuffed Vine Leaves (Dolmades) โ the meditative process of rolling grape leaves around a herby rice filling was as satisfying as the final result. We enjoyed taking turns in crafting the dolmades.
- Melitzanosalata โ a smoky, garlicky eggplant spread, mashed to perfection and gleaming with olive oil and herbs… plenty of herbs!

- Rooster with Cretan Pasta (Xiropita) โ a rustic, slow-cooked dish rich in flavor and deeply comforting. Probably one of the best dishes I ever tasted on the island!
- Kolokythokeftedes โ zucchini fritters bursting with herbs, fried to golden perfection. This is one of my favorite dishes and learning to prepare it with feta cheese was a tasty surprise!

For dessert, we didnโt cookโbut were instead served a warm, fragrant halva made with sultanina grapes and orange zest, easily the best Iโve ever tasted. The aroma alone was worth the journey.

Camaraderie in the Kitchen
Though guided by Koula, the cooking was a group effort. We chopped, rolled, stirredโand yes, we washed dishes too.

We took turns at the sink, laughing as we swapped stories and admired each otherโs kalitsounia shapes. There was an easy camaraderie among strangers, as if the act of cooking together made us kin.
We passed spoons and stories and smiled at the mess. It felt like being in someoneโs home during the holidays, where helping out is part of the joy!

Magic in the Olive Mill & Dining in the Open Air
Our dinning table was set in part of an abandoned olive millโa quiet, almost magical place with ancient stone troughs and shafts of afternoon light.

I found myself suddenly thinking of the generations before us who lived and labored in these hills, in this very mill.
We sat at colorful outdoor table dressed in a Cretan tablecloth, where everything we had made was laid out with pride. Wine was poured. Laughter floated through the warm air. The smell of herbsโwild thyme, mint, rosemaryโseemed to rise with the sunset. The meal was a feastโnot just for the palate, but for the eyes, the nose, the heart.

Koula gifted each of us a booklet of the recipes weโd made and a handmade Cretan apronโa beautiful, thoughtful reminder of a day rich with tradition and kindness.
